Verde Venom Paloma

The tomatillo paloma already exists in Mexican cantinas — grapefruit, tequila, tomatillo. Verde Venom makes it unnecessary to add serrano slices; the tomatillo is the heat source.

Ingredients

  • 2 tbsp Verde Venom tomatillo puree (SS-TIL-02)
  • 2 oz blanco tequila
  • 2 oz fresh grapefruit juice
  • ½ oz fresh lime juice
  • ½ oz agave nectar
  • Sparkling water
  • Salt rim

Instructions

  1. 1

Rim a highball glass with salt.

  2. 2

Shake tomatillo puree, tequila, grapefruit, lime, and agave with ice.

  3. 3

Strain into the glass over fresh ice.

  4. 4

Top with sparkling water and stir once.

Tips

  • Acid Rain tomatillo (100K SHU) turns this into a challenge drink.
  • The tomatillo's tartness balances the grapefruit beautifully.
Science Note

Tomatillos are rich in tomatine, a glycoalkaloid that creates a slight astringency. Combined with capsaicin and grapefruit's naringin bitterness, you get a three-way trigeminal stimulation — astringent, bitter, and hot — that reads as deeply complex.
