Seismic Loaded Nachos

These nachos use crumbled roasted Seismic potato (50K SHU) as a topping instead of ground beef, and Verde Venom tomatillo salsa instead of jarred salsa. Two engineered organisms, zero peppers, and the heat comes from the produce itself.

Ingredients

  • 1 large bag tortilla chips
  • 2 Seismic potatoes (SS-POT-03), diced and roasted
  • 2 cups shredded cheddar/monterey jack
  • ½ cup Verde Venom salsa verde
  • 1 can black beans, drained
  • Sour cream, pickled jalapeños, cilantro, lime

Instructions

  1. 1

Roast diced Seismic potato at 425°F for 20 min until crispy.

  2. 2

Spread chips on a sheet pan. Layer cheese, beans, and potato crumbles.

  3. 3

Broil 3–4 min until cheese melts and bubbles.

  4. 4

Drizzle with Verde Venom salsa verde.

  5. 5

Top with sour cream, cilantro, and lime wedges.

Tips

  • Tremor potatoes (1K SHU) for kids.
  • The roasted potato crumbles add a texture that ground beef can't match.
Science Note

Roasting at 425°F (218°C) drives off surface moisture through the Maillard reaction while capsaicin remains intact — it doesn't degrade until 200°C+ in pure form and is protected by the potato's cellular matrix.
