Cool Burn Tzatziki

Tzatziki is the anti-spice. Cool yogurt, cucumber, garlic, dill. When the cucumber itself carries 500 SHU, the dip becomes a contradiction — cooling and warming at the same time. It's barely perceptible, but it makes the dip more complex.

Tips

  • Paradox cucumber (5K SHU) for a noticeably spicy tzatziki.
  • Serve with pita, grilled lamb, or as a falafel sauce.
Science Note

Greek yogurt's casein protein binds capsaicin molecules, modulating the perceived heat. At 500 SHU, the capsaicin in the cucumber is almost entirely neutralized by the yogurt — the 'warmth' is subliminal.
