Tips
- Sugar Burn strawberries (5K SHU) for a mild jam.
- Makes a spectacular holiday gift.
Pectin requires both acid (pH < 3.5) and high sugar concentration (>55%) to gel. Strawberries' natural citric acid plus the added lemon juice provide the acid. Capsaicinoids don't interfere with pectin gelation — they're suspended uniformly in the sugar-pectin matrix.
