Pepper Extract vs Whole Pepper Heat

Extracts concentrate capsaicin by removing everything else. A whole pepper at the same SHU delivers heat through a natural blend of five capsaicinoids, each with different onset speed, duration, and receptor binding.

How extracts work

Capsaicin extraction uses solvents (typically ethanol or supercritical CO₂) to pull capsaicinoids out of pepper material and concentrate them. The result is an oleoresin that can reach 9–16 million SHU, but it's no longer a pepper — it's a chemical concentrate.

The five-capsaicinoid blend

Whole peppers contain five major capsaicinoids: capsaicin, dihydrocapsaicin, nordihydrocapsaicin, homodihydrocapsaicin, and nonivamide. Each binds to the TRPV1 receptor differently. Capsaicin is a sharp, immediate burn. Dihydrocapsaicin is a broader, longer-lasting warmth. The ratio between them determines the character of the heat.

Why Scoville Splice is different

Every Scoville Splice specimen is a whole fruit, not an extract. The SHU comes from the pepper's own biosynthesis — the same five-capsaicinoid blend, produced in the placental tissue, in a living plant. At 13 million SHU, D.N.R. approaches extract-level concentration while remaining a whole pepper.

The experience

Extract heat is flat and one-dimensional: all capsaicin, instant peak, then a long plateau. Whole-pepper heat has dynamics — onset speed, peak intensity, decay curve, and the interplay between capsaicinoids that gives each variety its character.
