Kokumi Mouthfulness Engineering via GCS1 Overexpression for γ-Glutamyl Peptide Accumulation: IFI-K Construct Specifications

Priyanca Ford · ORCID 0000-0003-0395-1752 · Scoville Splice LLC · 2026

Abstract

Enhancement of kokumi mouthfulness through overexpression of GCS1 (γ-glutamylcysteine synthetase), increasing accumulation of γ-glutamyl dipeptides and tripeptides that activate the calcium-sensing receptor (CaSR). Engineering approach targets the kokumi continuum — the enhancement of pre-existing flavors without imparting flavor of its own — across multiple plant chassis. Construct specifications target IFI-K scores for consumer and commercial applications. PDF and full specifications in preparation.
