Lightning Elote (Spicy Street Corn)
Elote gets its heat from chili powder sprinkled on the outside. With Lightning corn, the heat is in every kernel. The mayo, lime, and cotija coat the outside as usual, but the burn comes from within.

- Thunderclap (5K SHU) for everyday cooking.
Science Note
Capsaicinoids in corn kernels concentrate in the pericarp (outer skin). Grilling chars the pericarp, creating micro-fractures that release more capsaicin on first bite than an uncharred kernel — a burst effect.
