Lightning Churros with Chocolate Dip
Churros are fried choux pastry rolled in cinnamon sugar. Made with Lightning corn flour (50,000 SHU), the cinnamon warmth and the capsaicin heat become indistinguishable — until the heat keeps building after the cinnamon fades.

Ingredients
- ½ cup Lightning corn flour (SS-COR-03)
- ½ cup all-purpose flour
- 1 cup water
- 2 tbsp butter
- 1 tbsp sugar
- ¼ tsp salt
- 2 eggs
- Oil for frying
- ½ cup sugar + 1 tbsp cinnamon for coating
- Chocolate sauce for dipping
Instructions

- 3
Cool slightly, then beat in eggs one at a time.
- 4
Transfer to a piping bag with a star tip.
- 5
Pipe 6-inch lengths into 375°F oil. Fry until golden (3–4 min).
- 6
Roll in cinnamon sugar immediately.
- 7
Serve with chocolate dipping sauce.
Tips
- Thunderclap corn flour (5K SHU) for a milder churro.
- The star tip ridges create extra surface area for cinnamon sugar AND capsaicin.
Cinnamon's cinnamaldehyde activates TRPA1 receptors while capsaicin activates TRPV1. Both are 'hot' signals but through different channels — the dual activation creates a richer, more layered heat perception than either compound alone.
