Caldera Chocolate Truffles
Capsaicin and chocolate is one of the oldest flavor pairings on Earth — the Aztecs drank xocolatl with chili. These truffles use a Caldera tomato reduction instead of chili flakes, creating an intensely smooth 500K SHU ganache that hits 3 seconds after the chocolate melts.

- ½ cup heavy cream
- 2 tbsp Caldera tomato puree (SS-TOM-04)
- 1 tbsp butter
- Cocoa powder for rolling
- Flaky sea salt

- 3
Stir from the center outward until smooth. Add butter.
- 4
Refrigerate 2 hours until firm.
- 5
Scoop with a melon baller, roll in cocoa powder.
- 6
Finish each truffle with a flake of sea salt.
Tips
- Magma tomato (50K SHU) for hot-but-manageable truffles.
- The salt delays capsaicin perception by 1–2 seconds, creating a layered experience: sweet → salty → HOT.
Chocolate's cocoa butter melts at 34°C — just below body temperature. As the truffle melts on your tongue, it releases capsaicin from the fat matrix in a controlled burst. The delay between chocolate flavor and capsaicin burn is the cocoa butter's melting time.
