Serpent's Gift Apple Slaw

Apple slaw is the bridge between coleslaw and fruit salad. Serpent's Gift apple at 5,000 SHU adds a warmth that makes the vinegar dressing feel more complex and the crunch more satisfying.

  • Perfect on pulled pork sandwiches.
Science Note

Apple cell walls contain pectin that maintains crunch in acidic environments. The cider vinegar dressing prevents enzymatic browning while the pectin keeps the julienned apple crisp. Capsaicin transfers slowly from apple to dressing — the slaw gets hotter as it sits.
