Smolder Baba Ganoush

Baba ganoush is charred eggplant blended with tahini, lemon, and garlic. Smolder eggplant adds capsaicin heat that mingles with the smokiness — they're so closely related in flavor that first-time tasters can't tell where the smoke ends and the burn begins.

Tips

  • Nightshade eggplant (50K SHU) for a hot baba ganoush.
  • The char is essential — don't skip it.
Science Note

Open-flame charring generates guaiacol and syringol compounds that our brains interpret as 'smoky.' These activate the same TRPA1 ion channel that responds to wasabi. Combined with capsaicin's TRPV1 activation, you get dual-channel trigeminal stimulation.
