Wildfire Broccoli Stir-Fry
High-heat wok charring is the fastest way to make broccoli interesting. When the broccoli is Wildfire (10K SHU), the charred florets carry both smoky wok hei and capsaicin heat. Garlic and soy sauce are the only additions needed.

- 1 tsp sesame oil

Tips
- Brush Fire broccoli (1K SHU) for a milder side.
- The char is the point — don't crowd the wok.
Broccoli contains sulforaphane, a compound with its own mild pungency. Combined with capsaicin, you get dual-pathway activation: sulforaphane on TRPA1, capsaicin on TRPV1. The char adds a third dimension through guaiacol activation of olfactory receptors.
