Capsaicin is ethanol-soluble, which means tequila actually dissolves it — unlike water, which just spreads it around. A properly built spicy margarita has heat distributed evenly through every sip, not concentrated in floating pepper fragments.

Ingredients
- 2 oz blanco tequila
- 1 oz fresh lime juice
- ¾ oz agave nectar
- 2–3 slices fresh jalapeño or serrano
- Tajín or chile-salt rim (optional)

Muddle pepper slices in the bottom of a shaker — press firmly to release oils, not pulverize.

Add tequila, lime juice, and agave. The ethanol will begin dissolving capsaicin immediately.

Add ice and shake vigorously for 15 seconds.

Double-strain into a rocks glass over fresh ice. The straining removes pepper solids while keeping dissolved capsaicin.

Garnish with a lime wheel and a thin pepper slice.
At 40% ABV, tequila is an effective capsaicin solvent. The ethanol pulls capsaicin out of the muddled pepper tissue into solution, distributing it evenly. This is why shaking matters — it maximizes contact time between the spirit and the pepper oils. Agave's fructose provides the same mild analgesic effect as sucrose, tempering the burn.
