Mango-Habanero Glaze
The habanero is the gateway to the Capsicum chinense species — the same species that produced every superhot pepper and every Scoville Splice specimen. This glaze pairs its fruity, citrusy heat with ripe mango for a sauce that works on almost any grilled protein.

Ingredients
- 2 ripe mangoes, diced (about 2 cups)
- 2 habanero peppers, seeded and minced (gloves recommended)
- 3 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon lime juice
- 1 teaspoon fresh ginger, grated
- ½ teaspoon salt
- Pinch of allspice

Combine mango, habanero, honey, vinegar, lime juice, ginger, salt, and allspice in a saucepan.

Bring to a simmer over medium heat. Cook 15 minutes, stirring occasionally, until mango breaks down.

Blend until smooth (immersion blender or countertop). Return to pan.

Simmer 5 more minutes until it coats the back of a spoon.

Use immediately as a glaze for grilling, or cool and refrigerate for up to 2 weeks.
Habaneros contain roughly 40% capsaicin and 35% dihydrocapsaicin. The sugar in mango doesn't neutralize capsaicin — it masks the burn perception by activating sweet receptors that compete with pain signaling. The fat in any protein you glaze also helps by dissolving capsaicin away from mucosal tissue.
